Turkey Burgers with Zucchini
Turkey (or chicken) burgers are a pleasant alternative to beef burgers, but still satisfy that hankering for barbecue-type fare. Grated zucchini will moisten the meat nicely, while the herbs and spices add flavour. These burgers pair well with the Greek tzatziki-like sauce listed below. The sauce can be served on the side or slathered inside a bun along with lettuce and tomatoes.

Ingredients for Turkey Burgers
1 lb. ground turkey or ground chicken
1 large zucchini, coarsely grated (2 cups or 200 grams)
1 large egg
1 - 2 tablespoons chopped mint (optional)
1 - 2 tablespoons chopped parsley or cilantro (optional)
2 cloves garlic, minced or crushed
1 teaspoon cumin
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon cayenne
Vegetable or olive oil for searing
Method for Turkey Burgers
Peel and grate the zucchini. Put into a sieve and toss with several sprinkles of salt. Let stand over a bowl to drain for 15-30 minutes. Press out extra liquid.
Combine all other ingredients, add the pressed zucchini and mix well. Form the patties.
Heat the oil in a frying pan to medium-high. Sauté the burgers on either side. Continue cooking until done OR optionally, transfer to a 425 degree oven to bake for 5-10 minutes OR grill on an open barbecue until cooked through. If desired, baste each side with Honey Mustard Barbecue Sauce during the last few minutes of cooking. Serve with the Sour Cream Sauce (below).

1/2 cup sour cream
1/2 cup Greek yogurt
1 teaspoon lemon zest, grated or chopped fine
1 tablespoon lemon juice
1 small clove garlic, chopped or crushed
1 tablespoon sumac (optional)
1/2 teaspoon salt
1/4 teaspoon pepper
Method for the Sour Cream Sauce
Combine all ingredients. Refrigerate until ready to use.
