Ingredients
2 tablespoons oil
1 large onion, chopped
1 clove garlic, minced
1 medium fennel bulb, chopped (stalks discarded)
1 large zucchini, sliced
green beans
2 carrots, sliced
1 teaspoon turmeric
1/2 teaspoon cumin
1/4 teaspoon ginger
1 large tomato, cut into chunks
salt and pepper
Method
Heat the olive oil on medium-high in a large saucepan. Saute the onions until soft, then add the garlic and cook for 1-2 minutes.
Add the fennel, zucchini, beans and carrots. Cook for 5 minutes, stirring often.
Reduce the heat to low-medium. Add the turmeric, cumin, ginger and salt and pepper.
Stir in the tomatoes. Cook until the carrots are softened for 10 minutes.
Serve warm or at room temperature. This dish can be prepared ahead and rewarmed with 1 - 2 tablespoons of water, if desired.
