Ingredients
1 / 2 cup water
1 / 4 cup chopped dates
2 tablespoons butter
1 tablespoon chopped or dried ginger
1 teaspoon curry
1 / 2 teaspoon Dijon mustard
1 / 2 teaspoon cumin
2 1/2 cups diced mango, peach or nectarine
cilantro or parsley for garnish
Method
In a saucepan, combine the water, chopped dates, butter, ginger, curry, mustard and curry. Bring the mixture to a boil and immediately reduce the heat to medium-high until the dates are softened, about 5 minutes. Mash slightly.
Add the chopped mangoes and cook for 2-3 minutes more. Mash slightly, according to your preference.
Serve at room temperature or chilled.
