Squash with Dates and Thyme
Autumn brings a cornucopia of gourds that can be baked, mashed or turned into soups. Combining squash with a fruit is a pleasing accompaniment to pork. Try adding apple or serve with a date/mango chutney. Sweet potato with ginger and maple syrup is another way to make a simple meal special.

Ingredients
butternut or acorn squashes cut into 1/2 " wedges
1/2 bunch thyme
4 garlic cloves, crushed
1/4 cup olive oil
2 tablespoons unsalted butter or coconut oil
Kosher salt
Freshly ground black pepper
12 - 20 dates, pitted, quartered
Sea salt (optional)
Method
Preheat oven to 425°F.
Chop the dates and set aside.
Peel the squash. Optional - soften the outside edge of the squash by microwaving it on high for 1 minute.
Cut the squash in to 1/2'" wedges. Chop the garlic. Melt the butter.
Toss the squash, garlic, thyme, olive oil, and melted butter in a large baking dish; season with kosher salt and pepper.
Roast, tossing occasionally, until just tender, for 40-45 minutes. Add the dates; toss to coat. Roast until the squash is very tender and the dates are soft, 12-15 minutes.
Spoon any oil in dish over the squash, and sprinkle with sea salt (optional)..
