Apple Raisin Kugel
An easy noodle pudding that works as a side dish to accompany meat or on its own for a light meal. For an even sweeter version, add 1/2 teaspoon vanilla, but I find the fruit makes it sweet enough.

Makes 12 large squares
Ingredients
8 ounces egg noodles - any size
4 eggs, beaten
1 / 4 cup unsalted butter, melted, plus a tablespoon more to brush on top of the noodles, if desired
3 medium or 2 large cooking apples, chopped
1 / 4 - 1 1/2 cup raisins, according to your taste
1 / 2 cup sugar
1 1/2 teaspoons salt
2 teaspoons cinnamon

Method
Preheat an oven to 350 degrees.
Boil a large pot of salted water. Put the egg noodles into the boiling water and cook until al dente.
While the noodles are cooking, put the raisins into a bowl with very hot water. Let sit for 5 - 10 minutes to bring out the sugars, then drain.
Remove the noodles from the heat and drain. Return the noodles to the pot.
Add all the ingredients to the noodles and mix well.
Grease an 8" x 8"" pan and pour in the noodle mixture. If desired, melt a tablespoon of butter and brush on top of the noodles to prevent the edges from drying.
Bake at 350 degrees for 40 - 50 minutes, until the top is golden brown.
Remove from the oven and let the kugel sit for 5-10 minutes before cutting into squares with a serrated knife.
Serve warm or cold. Sour cream or yogurt make a good accompaniment when eaten as a main dish in a light meal.
