Ice Box Brownies
A North End treat - or my mother's North End treat, anyway. Kids love this "something from nothing" easy brownie. Not surprisingly, adults love them, too. I slice it and keep it in the freezer for those days when I need a chocolatey nosh to nibble.

For an 8" x 8" baking pan
Ingredients - Brownies
1/2cup butter
1/2 - 3/4 cup sugar (your preference)
2 heaping tablespoons cocoa
1 egg, beaten
1 teaspoon vanilla
12 individual graham wafer squares, broken into random sizes
Chocolate wafers (optional)
Chocolate chips (optional)
Coconut (optional)
Ingredients - Icing
2 tablespoons butter
1/4 cup cocoa
1/4 teaspoon salt
1 teaspoon vanilla
3 tablespoons milk
1 3/4 cups icing sugar
Method
Brownies
Grease an 8" x 8" baking pan or line it with parchment paper.
In a saucepan, melt the butter, keeping the heat at medium. Add the sugar, cocoa and the beaten egg, stirring constantly so the egg doesn't solidify. Remove the mixture from the heat as soon as bubbles form on the side. Mix in the vanilla.
Break the wafers into pieces and add them into the saucepan along with any of the other optional ingredients. Press the whole mixture into the 8" x 8" pan and refrigerate.
Icing
Using a hand mixer or a food processor, combine the butter and the cocoa until mixed.
Add the salt and vanilla, then alternate the icing sugar and the milk, combining until smooth. If needed, add a few drops of milk at a time until the icing is smooth and easy to apply to the brownies.
When the brownies are chilled, top with the icing and refrigerate again.
