Lemon/Garlic Rice
This dish can be adjusted to use any variety of rice you prefer. My favourite version is long grain brown rice combined with wild rice - about a 3:1 ratio. The smaller amount of wild rice adds a nutty flavour to the dish, but you only need to cook the dish until the larger volume of rice is done. The wild rice will be slightly al dente, but will blend in perfectly.
Work quickly at the last step, covering the dish so the flavours have a chance to meld and the rice finishes cooking with the latent heat.

Ingredients
Rice - any kind and any blend of your favourite varieties. Suggested ratios of lighter to heavier varieties: 3:1.
Water, Vegetable or Chicken Broth
1-2 cloves garlic, minced
1-2 teaspoons lemon zest
knob of unsalted butter, depending on the amount of rice
Method
Mince the garlic and combine with rice and broth or water as desired. Add salt if using only water. Cover and cook on the stovetop or in the microwave until just done.
While waiting for the rice to cook, cut lemon rind into tiny pieces of zest. Set aside a knob of butter - 1-2 tablespoons, depending on the quantity of rice.
Immediately that the rice is cooked, uncover and quickly mix in the butter and lemon zest, fluffing it with a fork until the butter is melted. Cover and let sit for at least 5 minutes until the butter and lemon are absorbed.
