Marinated Cheese

Ingredients
1⁄2 cup olive oil
1⁄2 cup white wine vinegar
1 bottle (2 ounce) pimentos, drained and diced
3 tbsp fresh parsley, chopped
3 tbsp scallions or shallots, minced
3 clove garlic, minced
1 tsp sugar
3⁄4 tsp dried basil
1⁄2 tsp salt
1⁄2 tsp ground black pepper
30 1/4" (6 mm.) slices of cheese - goat cheese, haloumi or other cheese of your choice
Method
Combine the oil, vinegar, pimentos, parsley, garlic, sugar, basil, sugar, salt and pepper. Mix or shake. Slice cheese and place flat in a baking dish. Pour the dressing over the cheese, cover and refrigerate the dish for 6-24 hours. Baste or spoon the liquid on top of the cheese occasionally. Remove the dish from the refrigerator an hour before serving. Place each cheese slice on a toasted soft baguette or cracker of your choice and serve.
