Chocolate Brownies (Passover or Regular)
This quick and easy treat can be made with either cake meal (to make it suitable for Passover), or with flour and voilà - brownies all year. These little gems are moist and chewy, and freeze well for an after-dinner treat or for those moments when you need a pick-me-up. Add chocolate chips or nuts, or both for even more flavour, and if you want them to be even sweeter, top them with chocolate glaze or icing.

Ingredients
4 eggs
6 tablespoons cocoa
1 cup sugar
1/2 cup oil
1 teaspoon vanilla
1/2 cup cake meal or flour
1/2 - 1 cup chocolate chips and/or chopped walnuts (I used 1 cup)
Method
Grease an 8" x 8" baking pan, using using butter, cooking spray or a paper thin layer of oil
Preheat the oven to 350 degrees.
Beat the eggs well. Add the sugar, oil and vanilla,
Add the cocoa, then the cake meal or flour.
Using a spatula, gently mix in the chocolate chips and/or nuts.
Scrape the batter into baking pan. Bake for 25-35 minutes, depending on your oven. Insert a toothpick into the middle to see if it comes out dry.
Suggestion: Circle the outside of the pan with a foil collar to prevent the outside parts from becoming too dry while the interior remains unbaked.
