Blueberry Crisp
A perennial favourite. Make one for dessert and one to tuck in the freezer for a winter-time treat. Optionally, add a tablespoon of lemon juice to the blueberries.

Ingredients
For the Blueberries
3-4 cups fresh blueberries, rinsed and picked over OR frozen (do not thaw)
1/2 cup white sugar
1 tablespoon cornstarch
1/4 teaspoon salt
1 tablespoon lemon juice (optional)
For the Crisp
1/2 cup unsalted butter, room temperature
3/4 cup brown sugar
1 cup oatmeal (any kind)
1 cup flour
several shakes of ground cinnamon, to taste
Method
Preheat an oven to 350 degrees.
Toss the blueberries with the sugar, cornstarch and salt (and lemon juice, if using). Pour the mixture into an 8" x 8" greased baking pan and set aside.
With your fingers or a pastry cutter, crumble the butter and brown sugar together until the butter is in tiny pieces, then add the flour, oatmeal and cinnamon, crumbling the mixture until thoroughly combined.
Sprinkle the topping evenly over the blueberries. Bake in a 350 degree oven for 45-60 minutes, until toasty golden on the top.
Serve with ice cream or whipped cream.
