Here's a versatile quickbread, suitable for appetizers, a snack or for the table. Heating the pan and oil first means the bottom layer of the batter will cook instantly when it's poured, providing a base for the feta. The feta melts to add a pleasant, tangy taste to the fluffy, pancake-like bread.

Serves: 4-6
Ingredients
3/4 cup (150g) all-purpose flour
1/4 teaspoon salt
7/8 cup (200ml) milk
2 eggs
2 tablespoons water
2-3 tablespoons olive oil
3/4 cup (150g) crumbled feta
1/2 cup or more Kalamata olives, diced (optional)
Few teaspoons or more oregano (optional)
Method
Preheat the oven to 350 degrees F (170 degrees Celsius).
Grease a square baking dish (8" x 8") with half of the olive oil and place in the oven to warm up for 5 minutes.
In a bowl, add the flour, salt, milk and eggs and whisk until a batter forms.
Add the water and continue whisking until combined.
Remove the pan from the oven and pour the batter carefully. Then top with the crumbled feta. Swirl this in with a spoon and top with another drizzle of olive oil.
Bake for 40-50 minutes until golden and crispy on top. Add the olives and oregano, if desired. Cut into squares.
