Chocolate Pecan Pie Squares
A shortbread crust with a sweet, chewy topping - a favourite dessert and pick-me-up. Squares are easy to make and freeze well for whenever you need them. Ingredients for the Crust
3/4 cup all-purpose flour
1/8 teaspoon salt
4 tablespoons unsalted butter, room temperatures
2 tablespoons brown sugar
Ingredients for the Filling
1 large egg
1 large egg yolk
1/3 cup corn syrup
1/3 cup granulated sugar
1 tablespoon unsweetened cocoa powder
1 tablespoon unsalted butter, melted
1/2 teaspoon vanilla
1/4 teaspoon salt
3/4 cup chocolate chips
3/4 cup coarsely chopped pecans
Method for the Crust
Preheat the oven to 350 degrees.
Lightly grease an 8-inch square baking pan.
In a medium bowl, combine the flour, salt, butter and brown sugar. Beat with an electric mixer on medium speed until blended and crumbly.
Press the crust in an even layer over the bottom of the greased pan. Bake for 10-15 minutes or until golden brown around the edges.
Method for the Filling
In a large bowl, beat the egg, egg yolk, corn syrup, granulated sugar, cocoa powder, melted butter, vanilla and salt. Beat with an electric mixer on medium speed until well blended.
Using a spoon, stir in the chocolate chips and pecans.
Baking
Remove the crust from the oven and pour the filling evenly over the top of the crust. Bake for 20-25 minutes or until the middle appears set. Cool completely before cutting into bars.
