Classic Apple Crisp
Simple is delicious! Here's a recipe I have made all my life, but for which I had no specific measures for the ingredients. I always made it by "feel," the same way my mother did. Finally, I figured it out. Make this anytime you feel like a down-home easy and delicious dessert. Granny Smith, Honey Crisp, Jazz or any firm apple will do. Use crab apples if you have them, adding more sugar/cinnamon to cut the tartness. Don't bother peeling crab apples, simply cut them thin. The thin skins will disappear in the baking process.
Make it a crisp with blueberries or a combination of rhubarb and mangoes. More delicious desserts here.
Ingredients
1 cup oatmeal, any kind
1 cup flour
1/4 teaspoon cinnamon
3/4 cups brown sugar
1/2 cup butter
few grains salt
2-3 large apples - a firm variety of your choosing, peeled and sliced thinly
Sugar/Cinnamon Mixture for Apples
1/2 cup white sugar
1/4 - 1/2 teaspoon cinnamon
Method
Preheat an oven to 350 degrees.
Combine the flour, oatmeal, cinnamon, brown sugar and salt. Cut the butter into the mixture, rubbing until the ingredients are crumbly. Grease and 8" x 8" pan with butter and spread half of the crumb mixture over the bottom.
Peel and slice the apples. Placed the sliced over the crust in the pan.
Combine the 1/2 cup white sugar and 1/4 - 1/2 teaspoon cinnamon. Put into a shaker if possible or use a spoon to sprinkle it.
Shake or sprinkle the white sugar/cinnamon mixture over until lightly over the apples, according to your taste.
Cover the apples with the rest of the crumble mixture. Bake for 30-45 minutes until lightly browned on top. Serve warm with ice cream or whipping cream, or at room temperature.
