Fruit Salad with Balsamic Reduction
This easy and on-so-pretty dish is perfect for a brunch or side dish, any time of the year. Slice your favourite fruits about 1/8 inch thick, arrange in a pattern that pleases you, or dice the fruit into small pieces and toss them in a riot of colour. The "hardest" part is paying attention to the balsamic reduction, so note that if it cools and becomes hard, simply warm it gently - gently! for several minutes. It might look as if it won't soften, but it will. Be patient!
Top with seeds or nuts of your choice, fresh or toasted, and cheeses, if desired.

Ingredients
Arugula, spinach, lettuce or other greens (optional)
Suggested fruits:
Pears
Mangoes
Oranges
Red Grapefruit
Pineapple
Pomegranate
Few tablespoons balsamic vinegar (depending on the size of your salad
Few tablespoons honey (according to your taste preference)
Method
If using, spread the greens over a serving plate.
Slice or dice the fruit and arrange in a pattern of your choosing.
In a small saucepan, mix the balsamic vinegar and honey over medium-low heat. Stir constantly as the liquid froths and begins to thicken, about 5-10 minutes. Take it off the heat just before it gets to the deisred texture - the cooking process will continue. Cool slightly and drizzle over the fruit. If the reduction gets hard, return it to the stovetop on low heat to melt, which may take several minutes, but it will melt. If needed, add a drop of two of water, but no more.
