Caramelized Onions with Thyme
A light and easy appetizer, made from a staple ingredient in every kitchen. Saute the onions super-slowly to let the natural sugars release. Add thyme, if desired, and season with a little sugar and salt. Serve on a cracker or a toast sliced from a baguette, bagels or no-knead artisan French bread. No one will refuse if you offer them a glass of chilled white wine, either.
Another option - splash in a dash of balsamic vinegar and combine well to blend the flavours thoroughly.

Time: 40 minutes
Ingredients
2 large yellow or red onions
olive oil as needed
4 or 5 sprigs of fresh thyme OR equivalent dried thyme (1 large sprig is equal to 1/4 teaspoon of dried thyme)
1 - 2 teaspoons sugar
Salt to taste
Method
Chop the onions into fine pieces.
Heat the olive oil in a frying pan on medium-high heat and add the onions. Begin sauteing, turning down the heat to medium-low so the onions soften, but don't darken. Add more oil if needed. Do not cover.
Mix the onions regularly with a wooden spoon or other utensil for about 5 minutes. Add the sugar, salt and sprigs of thyme or dried thyme.
Stir well and continue to saute on medium-low or low for 20-25 minutes more until the onions are extremely soft and jammy. Taste occasionally and adjust seasonings.
Sprinkle in a few drops of water if the onions begin to cook too quickly or stick to the bottom of the pan,
When the mixture has cooked and the flavours have been adjusted, remove any whole sprigs of thyme. Remove the pan from the heat. Let cool and serve at room temperature.
