Banana Cake
My mother's recipe, with an update she'd approve. Freeze the ripe bananas and then thaw them, incorporating the resulting liquid into the mix. The banana flavour is smoother, the cake nice and moist.

Ingredients
2 ripe bananas, mashed (best if first frozen, then thawed. Fold the resulting liquid into the mix)
1/2 cup butter
1 cup sugar
1 teaspoon salt
2 eggs
1 teaspoon vanilla
1 1/2 cups flour
1 teaspoon baking powder
4 tablespoons buttermilk
1 teaspoon baking soda
1/2 cup crushed walnuts (optional)
Method
Preheat the oven to 350 degrees.
Mash the bananas well. Mix any liquid that resulted into the mashed bananas. Set aside.
Using a fork or in a food processor, mash the butter, sugar and salt together.
Add the eggs and vanilla. Mix well.
Add the bananas. Combine well.
Combine the flour and baking powder. Add them to the wet ingredients, mixing until completely combined.
In a cup or small bowl, combine the buttermilk and the baking soda, then add to the cake batter. Mix well.
Add the walnuts, if using.
Grease an 8 inch bread loaf pan well. Pour in the batter. Bake at 350 degrees for 55-60 minutes. A toothpick inserted in the middle should come out dry. Let sit for a few minutes, then turn out onto a rack to cool.
