Roasted Lemon Garlic Mushrooms
A light bonbon before dinner or a pleasant side dish, suitable for any season. Taken from For the Love of Cooking, you'll whip this up in minutes.

Serves: 2-4
Time: 30 minutes
Ingredients
1/2 lb. mushrooms
Olive oil as needed
Sprinkles of dried thyme or fresh thyme leaves, to taste
Table salt or sea salt and freshly cracked pepper, to taste
1 tablespoon butter
1 clove of garlic minced
Juice and zest of 1/2 a lemon
Method
Preheat the oven to 400 degrees.
Giving them plenty of room to roast rather than steam, place the mushrooms on a rimmed baking sheet and drizzle with olive oil .
Sprinkle with the fresh or dried thyme, then season with sea salt and pepper, to taste. Toss to coat evenly.
Spread the mushrooms out in one layer on the baking sheets.
Place into the oven and roast for 10 minutes then flip them with a spatula, and cook for another 10 minutes, or until golden brown.
Melt the tablespoon of butter. Place the minced garlic into the melted butter and set aside.
Remove the mushrooms from the oven and drizzle the melted garlic butter on top, then place back into the oven for 3-5 minutes.
Remove the pan from the oven and squeeze the lemon juice and zest over the mushrooms. If desired, top with more thyme (although I did not). Toss to coat evenly.
