Ingredients
1 1/2 cups flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
4 tablespoons cold butter, cut into tiny pieces
1 cup shredded sharp cheddar (or gruyere)
2 tablespoons grated Parmesan cheese
1 large egg
1/2 cup milk
1/2 - 1 teaspoon Dijon mustard (optional, and according to your taste)
Method
Preheat the oven to 400 degrees.
Combine the flour, baking powder and salt. Cut the pieces of butter into the flour and blend thoroughly. Add the shredded cheeses and toss together.
Whisk the egg and mustard together. Add the milk and combine well.
Pour the egg mixture into the flour. Combine quickly and thoroughly. The dough will be wet and sticky.
On an ungreased sheet, form the dough into a flat circle. Use a serrated knife to cut the dough into wedges before baking.
Bake at 400 degrees for 12-16 minutes, depending on your oven. The scones should not look doughy in the centre and should be browned on top.
Remove from the oven and cut through the knife marks. Transfer to a basket. Cover to keep warm. Serve warm or cold.
