Squash and Apple Bake
Squash is a pleasant substitute for potatoes and rice, a dish that can be flavoured with sweet or savoury seasonings. This dish bakes while you're getting the rest of your dinner ready.
Note: Cutting the peel off a squash can be difficult and result in knife injuries (speaking from personal experience ... ). Cook the squash in the microwave on high for 1-2 minutes to soften the peel only. The peel will then be much easier to remove. I cut it off rather than peeling it - there is not much waste and cutting it off is much faster.
