Herb Baked Potatoes in Broth
Side dishes can make even an ordinary dinner memorable. Simply reach into the cupboard and choose a favourite herb to add to potatoes and create a different dish each time. NOTE: This dish must be made using a metal baking pan, since the potatoes are first baked without liquid. A glass pan will crack when the liquid is poured over the potatoes.

Serves 4
Ingredients
2 pounds potatoes, sliced
2 tablespoons butter, melted
2 tablespoons olive oil
2 tablespoons rosemary, basil or thyme
3/4 teaspoon salt
1/3 teaspoon pepper
1 cup chicken broth (low sodium, if possible)
1-2 tablespoons lemon juice (optional)
2 garlic cloves, finely minced
Method
Preheat the oven to 450 degrees.
Slice the potatoes into 1/4" slices and place in a metal pan. Pour in the olive oil, the melted butter and the herb you've chosen to use. Season with salt and pepper and toss until evenly combined.
Smooth the potatoes out evenly, in a single layer if possible. Bake for 15 minutes until the bottom of the potatoes are browned.
Remove the pan from the oven, flip the potatoes and bake again for 15 minutes until the other side of the potatoes are browned.
Remove the dish from the oven, pour in the chicken broth and lemon and sprinkle with garlic. Return the metal dish to the oven and bake until the potatoes are tender and the stock is reduced, about 15 minutes.
Serve warm with the remaining sauce drizzled on top.
