Broccoli Slaw

Ingredients
2 lb. broccoli (use parts of the stem except the most woody section at the bottom)
red onion - to taste, minced (Optional - use the onion fresh or saute gently if the taste of fresh onion is too strong).
1 / 2 cup mayonnaise
2 tablespoons lemon juice
2 tablespoons sugar
1 / 3/ cup cranberries or raisins
3 / 4 cup sliced almonds, sunflower seeds or pumpkin seeds, toasted (optional)
salt and pepper
Method
Grate all the broccoli in a food processor. Add the onion and grate.
Mix together the mayonnaise, lemon juice, sugar, salt and pepper. Toast the almonds or seeds gently in a pan on low heat.
Combine the mayonnaise mixture with the chopped broccoli and onion. Mix in the cranberries or raisins. Top with the almonds or seeds, if using.
