Fantastic Fudge Brownies
Brownies never go out of fashion. I have several recipes that are all chocolatey and delicious, but a favourite is this version from the Best of Bridge volume "Enjoy." The only change I've made is to reduce the amount of vanilla in the icing (the original calls for 2 tsp., but I find the taste too boozy). Slap the icing on as soon as the brownie is baked so it melts and then hardens into a firm, shiny glaze.

Ingredients
Brownie:
1 cup butter
2 cups sugar
4 heaping teaspoons cocoa
4 eggs, beaten
1 tsp. vanilla
1 cup walnuts, chopped (optional)
Icing:
2 cups icing sugar
2 tablespoons butter
2 tablespoons cocoa
2 tablespoons boiling water
1/2 teaspoon vanilla
Brownie Method
Cream the sugar, cocoa and butter. Add the beaten eggs and vanilla. Add the flour and fold in the walnuts (if using). Preheat the oven to 350 degrees. Bake in a greased 9" x 13" pan for 40-45 minutes. The top will appear to be underdone (it falls in the middle), but don't overcook. The brownie should be moist and chewy. Add the icing immediately after removing the brownies from the oven so it melts into a shiny glaze.
Icing Method
Mix the ingredients together with an electric beater while the brownies are baking. Spread on the brownies immediately after removing from the oven.
